McColl’s artichokes

B.C. artichokes—who knew? Grown in the Fraser Valley, McColl’s artichokes are preserved in oil with herbs, packed into jars, and sold ($7.95 for 250 millilitres) at Edible B.C., in the Granville Island Public Market. Another condiment—available from the same—to tickle winter-jaded taste buds is the mustard made by Everything Done Right in Cloverdale. Fig and date hits the spot between sweet and savoury—try it with ham—while horseradish packs a real punch ($6.50 for 100 millilitres). Meanwhile, chefs around town (including Brian Fowke at Metro restaurant) are leaping on the birch syrup from Big Lake ($12.50 for 125 millilitres). It’s time to stock your pantry.
