Perfect—that’s the only word you need to describe the roti at new Calabash Bistro (428 Carrall Street). Toss in a few more adjectives, like thick, plush, and pillowy soft, and you have a mattress commercial. But that’s not too far off, as this buttery flatbread was so good I wanted to press it lovingly to my cheek. Tender and chewy, not tough and rubbery like so many others, it wraps up a gentle, turmeric-coloured chicken curry ($11), which wakes up with an excellent house-made hot sauce. The roti also accompanies a veggie ($10) or seafood ($13) curry. Sweet dreams.
