High marks for what's humbly called "the pork dish" in Australian Allan Campion and Michele Curtis's fat new cookbook. Every Day in the Kitchen: Essential Recipes for the Modern Home (Hardie Grant, $26.95) has all the title appeal of a home-ec textbook but terrific, relevant recipes: everything from California rolls to Singapore noodles. The aforementioned pork dish is a simple matter of throwing pork belly (butt works fine) and assorted Asian ingredients into a covered pot and leaving them to do their thing while you go off to the movies. Rice, steamed bok choy, and you're done.
