A professional kitchen without a stove sounds like an oxymoron, but it's a reality at Manhattan restaurant Pure Food and Wine, which specializes in raw cuisine. Now, co-owners Matthew Kennery and Sarma Melngailis have written the book. Believing the "bold claim that raw foods can change your life", they set out to win converts less by preaching than by proving how delectable the uncooked, and unanimal, can be. This is sophisticated fare: arugula salad with pear, spiced pumpkin seeds, and Meyer-lemon dressing; shiitake, avocado, and pickled-ginger sushi rolls; flatbread pizza with hummus, green olives, cherry tomatoes, and za'atar.
