In an interview posted on the BBC website, Vancouver chef Vikram Vij has revealed his intention to perform the culinary equivalent of selling coal to Newcastle.

The Amritsar native and public face of My Shanti, Vij's, Rangoli, and Vij's Railway Express would like to market his frozen meals in India.

"The long-term vision is to take my Indian food...back to India, and say 'look, one of your sons left the country, he went to Canada, he became successful, and now he's giving back to the country the same love and passion'," Vij told business reporter Rob Boffard.

Then he added: "I always think of India as my mother. It would be like cooking for my mother."
