"Caviar" & Cocktails swaps chef and bartender pairings

      Six Vancouver chefs and bartenders will be playing a game of switcheroo on March 6. “Caviar” & Cocktails at YEW seafood + bar (791 West Georgia Street) will see three chefs pairing off with three bartenders they don’t typically work with.

      Participants include chef Ned Bell and bartender Justin Taylor from YEW at the Four Seasons Hotel Vancouver, chef Quang Dang and bartender David Wolowidnyk from West restaurant, and chef Jonathan Chovancek and bartender Lauren Mote, co-proprietors of Bittered Sling Extracts.

      The evening, which includes a six-course dinner, will see Bell paired with Wolowidnyk, Dang with Mote, and Chovancek with Taylor for the first three courses. Then each chef will be reunited with their company’s respective bartender for the final three.

      While the list of cocktails—which will all be made with spirits from B.C. craft distillery Okanagan Spirits—has not yet been released, the menu is available online. Dishes include Vancouver Island sea urchin with salmon roe, radishes, and charred orange dashi; maple, and quince-vinegar glazed bison ribs served with cheesy corn soufflé, onion confit, and egg-yolk pudding; and chocolate caviar for dessert.

      The evening, emceed by Vancouver singer and TV personality Dawn Chubai, goes from 6 to 8:30 p.m.
