I've been making seitan and adding vital wheat gluten to my homemade bread for decades, and now I have to place a special order at a local grocer to get some because gluten-free is the norm now.
I mean, yay for those with bonafide sensitivities to gluten, but damn it's hard to find this once ubiquitous ingredient. I'm not truly complaining because this minor inconvenience to me is nothing compared to the agony of celiac disease.

...fuck yes. Gluten is delicious. I like vegetables and lean protein but please--gimme bagels, bread, barley, noodles, all the time, right now. Gluten is amazing.
