There are yoga mats made of environmentally-friendly and sustainable products. Check out the ones at MEC, for example. There is a nice selection of eco-friendly mats available online as well, none of which are made of dead animals like sheep.

All-white yoga wear isn't very practical. It stains much too easily. A non-starter for the pretentious Vancouverites that grace the yoga studios at YYoga. This is probably why there isn't much of a selection of that colour available at Lululemon. Chip Wilson and the corporate shareholders wouldn't profit from white yoga wear, although their target demographic ironically are of that colour.
