Fairmont Hotel Vancouver to reopen The Roof restaurant

      Update: The Fairmont Hotel Vancouver announced that the reopening of The Roof was delayed. The Roof officially reopend March 25.

      One of Vancouver’s iconic dining rooms has been given a makeover and is reopening as a “pop-up” restaurant for a limited time. The Roof, located on the 15th floor of the Fairmont Hotel Vancouver, will open February 14 and operate through the fall while 900 West Restaurant + Bar in the hotel lobby undergoes renovations.

      Originally named the Panorama Roof when the Hotel Vancouver opened in 1939, the Roof was once known as a popular spot for big-band music, dancing, cocktails, and both northern and southern views of the city. Upon reopening, the Roof will pay homage to its heyday. A sunken bar lining the south-end of the room will serve classic cocktails, and live music is scheduled for Thursday to Saturday evenings.

      The room is divided into a bar and lounge on the south side and a seated dining room on the north. Newly appointed executive chef Cameron Ballendine—who has worked at four other Fairmont properties, including the opening of the Fairmont Dubai—has created a menu that focuses on steak-house favourites.

      Appetizers ($11 to $17) include warm Kusshi oysters topped with lemon hollandaise sauce, Dungeness crab cakes served with apple-jalapeno purée, lobster bisque, and Boston Bibb wedge salad. Main dishes ($25 to $55) include five cuts of steak, Ocean Wise seafood, and the hotel’s signature prime rib dinner, which comes with Yorkshire pudding, garlic mashed potatoes, and vegetables.

      Since the Roof is opening on Valentine’s Day, a special six-course meal will be offered ($129 per person). The prix fixe menu includes asparagus panna cotta with caviar, a mushroom soup, beef tenderloin and lobster, and a raspberry and white chocolate semifreddo for dessert.

      The Roof will be open for breakfast, lunch, afternoon tea, and dinner every day.
