Salchicha Meat Bar to offer preservative-free, local deli menu

      Carnivores will have a new place to chow down downtown when Salchicha Meat Bar opens on Monday (February 15).

      Owner Ami Cohen told the Georgia Straight by phone that his new eatery (located at 1065 Granville Street) will feature a fusion menu that melds the cuisines of the Middle East, Spain, and Israel.

      As salchicha means sausage in Spanish, the menu—needless to say—will revolve around cured meats and sausages, meat platters, and paninis.

      From roast beef and beef pastrami to smoked chicken, ham, and turkey, meat-lovers will have plenty to pick from.

      He emphasized that there are no preservatives or additives, and everything—including condiments, bread, and drinks—is local. Their slogan, "Minimum ingredients, maximum flavour" reflects that back-to-basics approach.

      "What I tried to create is a very authentic, real, natural, non-artificial product," he said. "Everything in that restaurant I fabricated with my own bare hands."

      Another big part of the menu will be an extensive selection of pickles.

      "We're big on pickles," he said. "We ferment any type of pickles."

      That includes a Libyan fusion pickle, cucumber with dill, a pickled lemon-mandarin fusion with chili, and even pickled parsnips.

      New in-house made sauces will be featured each week as a chef's special. A local Vancouver "green" sauce, for example, will include ginger, herbs, and maple syrup.

      There's also a chili ketchup, a mango-based mustard, a spicy Cilantro-based Yemenite sauce, and chipotle.

      But don't expect your typical flavours. "Nothing is typical," Cohen said.

      Local beers will include selections from 33 Acres, Steamworks, and Calister Brewing Co.

      Cohen, who is originally from Israel and hails from a line of chefs, is himself a chef but he also runs a renovation business and graduated in interior design. Consequently, he's overseeing the renovations at his new location and is pleased with how things are coming together.

      All food items will be available packaged for purchase as well.
