Hang onto summer with Peach Thyme Bellini

    1 of 1 2 of 1

September may call forth wilted leaves and pumpkin-space lattes, but that doesn’t mean you can’t at least try to hang onto summer by mixing up the unofficial drink of afternoon patio sessions and girls-nights-outs everywhere.

One part peach purée—we recommend crafting your own from your still-fresh Summerland stash—and three parts Ruffino prosecco, and a hint of bitters, it's tied together by a sprig of thyme. Peep the recipe, courtesy of the folks at Ruffino Prosecco, below.

      Peach Thyme Bellini

      3 parts Ruffino Prosecco

      One drop of bitters

      Sprig of thyme

      Method:

Place peach purée into the bottom of a chilled flute. Fill glass with prosecco, add bitters, and stir. Garnish with thyme.
