Love dulce de leche? Try OMG Cajeta caramel spread

      Those who swoon over dulce de leche will also love OMG Cajeta, a similar treat that’s made from goat’s milk rather than cow’s milk.

      Cajeta (pronounced “ka-heh-tah”) is a traditional Mexican caramel spread that’s produced locally in small batches using goat’s milk from Chilliwack’s Happy Days Dairy. It’s gluten-free and can be served as a topping on ice cream, cheesecake, waffles, crepes, and more.

      The sauce comes in vanilla, espresso, and rum flavours; a 250-millilitre jar sells for $12.49 ($15.49 for the rum version) at Gourmet Warehouse (1340 East Hastings Street).

      Yeah-this stuff is delicious. Swirl some Cajeta through your fav. brownie recipe and then bake-you'll be a hit this holiday season!

      You can easily make your own for much cheaper:
      2 cups goats milk, 2 cups cane sugar, drop or two of pure vanilla & 1/2 teas baking soda dissolved in 1 TBS. slightly warm water.
      Put all ingred. except baking soda in pot-heat until simmering, stirring until sugar is dissolved. Take off heat , add baking soda-will bubble up.
      Then simmer on stove until thick-that's it. You have to hang around and stir as the thicker it gets the more it might burn. Takes at least an hour -probably an hour and a half.
      Simmer until it's as thick as you want.
      Cool, put in a container and store in fridge. Lasts about a month but it will probably be long gone by then.

      Maybe start with a cheesecake that has a little goat cheese mixed in w/the cream cheese or put a little goat feta in a salad w/fresh blueberries?
      Time to explore new "goaty" horizons.....

      We are thrilled by this coverage of our OMG cajetas!!! It is indeed a classic Mexican dessert! Give it a try, is absolutely delicious over pancakes, waffles, fruit and yogourt, fresh fruit, chocolate, etc.

      Our cooking process takes at least 3 hours per batch since it's all handcrafted.
