I’m a huge fan of buffalo (bison, as it’s properly called), so it’s hardly surprising that I sniffed out a grill full of Maluma Health Food Products’ certified-organic bison sausages at Whistler’s Feast of Fields back in August. Chef Karsten Schellhas, a fourth-generation German sausage-maker and holistic nutritionist, owns a herd of bison with partners in Saskatchewan from which he turns out a range of sausages and burgers. Try the spicy Bison Prairie Sausages in a bun or dotted on a pizza—they’re addictively good. Available at the various Capers locations ($7.99 for 300 grams).
