At Let’s Roll Custom Sushi Bar, rolls are made to order while you watch
It’s a great concept: sushi made to order from ingredients on display while you watch, kind of like a Subway for sushi. At Let’s Roll Custom Sushi Bar (104–1184 Denman Street), you design exactly the type of roll you want. Start with a choice of seaweed or soybean base, pick your rice (white, a mix of brown and black, or “green” rice cooked in spinach water), and then add two veggies and two proteins. Filling choices are vast and include mango, red pepper, smoked salmon, and chopped scallop. Top the roll with garnishes such as tobiko or tempura bits, finish it with sauces such as miso mayo, and voilà! A roll you can name after yourself. Each roll is $7.95, and the 10 big pieces make a meal.

Love this place. The custom rolls are a great idea and the ingredients are all fresh, perhaps the best sushi I've had in Vancouver
