A standout at this year's trade-aimed BC Food Service Expo was the deep-flavoured mipkuzola from Hills Foods (1-130 Glacier Street, Coquitlam), a bresaola-type dried meat made from wild Arctic musk ox. Be the first on your block to serve this truly wild appetizer (maybe with crusty bread, a spritz of lemon, black pepper, and olive oil). Hills is the only place that sells it, it's $5.25 for 100 grams, and there's a $50 minimum purchase (but it doesn't have to be all mipkuzola).
