What is Pate a Choux? here are a few things we will learn in this class:

– Gougères: the savory version, with cheese added in the dough

– Choux a la crème: the classic cream puff

– Profiteroles: the choux is filled with vanilla ice cream or whipped cream and covered with warm chocolate sauce

– Chouquettes: cute and simple little puff simply covered with crunchy sugar bits, a childhood fav!

Holiday special: you will see how the wonderful creations above can easily be used for holiday entertaining, whether savory or sweet! Learn how to fill your choux with savory options (cheese, herbs, smoked salmon, etc...), different kind of cream (ice cream, whipped cream, flavored pastry cream), how to present (caramel, chocolate sauce...) and decorate them. How easily they can be prepared in advance and impress everyone!!!

The class is as much hands on as possible. I will demonstrate how to do the dough and fillings, and everyone will get a chance to pipe the choux, fill them and decorate them!
