Golden Rule

I think people and animals should be treated as you would want to be treated yourself. Why does that threaten people so much?

Because killing people is against the law. And eating them, doubly so.
I agree with you, but not in the way you mean, I think. I don't hold human life to be any more valuable than that of animals - life is life or it is not. Certainly I've seen no evidence of such a distinction in nature. Other species offer no favors to their fellow specimens, outside pack or family.
I'll be the first in line to eat cloned meat once it's commercialized (not beef because not my thing). But I have no problem with eating other life, even sentient species, because it seems the thing to do. Most of them eat other animate creatures and often each other, too.
Likely not the agreement (or rather, validation) you were looking for.

If it comes to a matter of war or survival, I hope my opponent would be intent to put me down as quickly and as humanely as possible, and not intent to have me suffer in agony. I would do the same for them.
