(Choose the two egg option. ) After that, it's all about the type of pan and getting an even temperature that's just right. Cast iron frying pans have always been good, but I tried a non-stick pan and was surprised to find it makes great pancakes easily, less fussing. I made pancakes this late morning and I fucking did it :) Out of the 3 I made the second one got a little burnt on one side but otherwise they were great.
