Follow the original, Joy of Cooking basic pancake recipe to the letter. (Choose the two egg option. ) After that, it's all about the type of pan and getting an even temperature that's just right. Cast iron frying pans have always been good, but I tried a non-stick pan and was surprised to find it makes great pancakes easily, less fussing. And watch 'em like a hawk while they are on the griddle!

Make sure the pan is hot before you drop that batter... that's some good advice for life in general.

I was in the same boat as you in respect of screwing up the pancakes and my solution was to pour small amounts of batter and make really small pancakes....lot easier to flip

Same thing,different shape, and impossible to screw up the cooking.
Also, you can slice ice cream into half inch thick slabs,and make ice cream sandwiches....the contrast between the hot and cold is awesome. Can spread a little jam in there too.
Twenty bux at Walmart.

For those of you looking for a success story........I did it. I made pancakes this late morning and I fucking did it :) Out of the 3 I made the second one got a little burnt on one side but otherwise they were great. I made them the size of the pan which is about 6 or 7". This is something to write home about :)
