I just fill the void with pandemic stress eating. So many ice cream buckets and buckets of fried chicken...
I'm still not fat though... Weird eh.

I did for the longest time... until I passed 40. It was subtle, but then, after a few years it sneaks up on you and you got a gut that won't go away easy.
I laugh at every young person who thinks they can escape the milestones of aging.

There's about 2000 calories in a 4 litre bucket of ice cream, so you'd have to lay around all day and eat 4-8 litres a day to gain any weight.

Me thinks your math is a bit wrong-o. Google suggests 137 calories per 1/2 cup of vanilla ice cream. (I'm using that and not Ben & Jerry's or something that's likely higher fat; more calories). That's 274 calories per cup, and with 4.22 cups per litre we get...1156 calories per litre.
8 litres = 9248 calories.
4 litres = 4624 calories.

Me thinks if you're eating "ice cream" which is full of candy and corn syrup garbage, sure. The 4 litre pail of vanilla in my freezer is 100 calories per 125 ml, which is 800 per litre, 3200 per 4 litres.
But thank you for missing the point, and also proving the point: recommended caloric intake for men is 2000 to 3000 per day, for women from 1500 to 2000.
To gain any significant weight you'd have to eat a bucket or more of ice cream each day.
