The Botanist to welcome chef from Chicago’s two Michelin-star restaurant Acadia for collaborative feast

      Fairmont Pacific Rim's Botanist (1038 Canada Place), is no stranger to hosting Michelin-star restaurant chefs in its kitchen. The Coal Harbour dining establishment teamed up with award-winning culinary talent from Singapore earlier this year, and Chicago is up next.

      Botanist’s executive chef Hector Laguna will be welcoming American chef and restaurateur Ryan McCaskey to Vancouver next month for a collaborative dinner. The culinary event is part of the Michelin on the Road dinner series, which showcase renowned chefs working together around the globe to create exclusive meals.

      Chef McCaskey is the owner of Acadia, a two Michelin-star restaurant located in the capital of Illinois that serves modern American cuisine inspired by his summers spent in Maine. “It's a blend of my early training which is rooted in classical cuisine and technique-driven fundamentals,” explained McCaskey in a press statement. “And I've recently shifted to more to subtlety which layers flavors, and incorporates innovative techniques.”

      Both chefs will showcase their own culinary flair in a seven-course tasting menu on August 9—guests can expect West Coast and East Coast flavours in the featured dishes.

      We’re sure that the lush, botanical atmosphere of the Botanist will complement the coast-to-coast-inspired gastronomic affair.

      Tickets ($219 per person, plus taxes and gratuity) include a cocktail and wine pairings, and can be purchased online. Limited seating is available, and reservations are required—if you’re keen on checking out this one-night-only event, we suggest calling ahead to avoid disappointment.
