Drink of the week: Dragon Queen

      Strawberries and chocolate make a match that’s hard to resist. Olivia Povarchook, bar manager at Juke Fried Chicken and Ribs, decided to combine the flavours in a cocktail. Like the other drinks at Juke, the Dragon Queen takes its name from a song; this one is by the Yeah Yeah Yeahs. “I knew when I created this drink it would be a hit, so I needed to give it a name to give off a strong first impression,” Povarchook says. “It adds a little indulgence to your day.”

      Dragon Queen

      1 ½ oz Flor de Caña five-year-old rum
      ½ oz Lillet Blanc
      ¾ oz strawberry-rhubarb syrup
      ½ oz lemon juice
      2 dashes Scrappy’s Chocolate Bitters

      To make strawberry-rhubarb syrup, combine 50 millilitres strawberry-rhubarb tea (steeped for 15 minutes and strained) with 500 millilitres sugar. Stir until combined.

      Shake all ingredients together in a cocktail tin. Fine-strain into a coupe glass. Garnish with dehydrated lemon.
