Golden Plates’ 2019 bartender of the year, J S Dupuis, turned to Bigallet China China to make his Jambe de Bois cocktail at Tableau Bar Bistro sing. Pronounced “sheena-sheena”, the liqueur from France’s Loire region consists of macerated sweet and bitter orange peels blended and distilled with aromatic plants, including gentian and cinchona (which produces quinine). “The saline solution brightens the cocktail, making it pop,” Dupuis says.
