Vancouverites have been lining up in droves for Japanese cheesecake—will the same be true of Japanese pancakes?

Like the light and airy Japanese take on western-style cheesecake, Gram Café and Pancakes has employed the same approach to pancakes and it’s preparing to launch in Vancouver.

Gram Café and Pancakes is preparing to open a location at 1284 Robson Street, near Jervis Street, in the West End.

Its menu covers classic pancakes, with variations ranging from coconut custard to tiramisu to salmon and avocado.

There’s also French toast, sandwiches and soup, desserts, and drinks.

But its pièce de résistance are fluffy, three-stack “soft-as-a-sponge premium pancakes” which it serves in limited 20 orders at 11 a.m., 3 p.m., and 6 p.m. For these specialties, the bottom layer is stuffed with a creamy lava onsen egg and features Hollandaise sauce, its middle layer is stuffed with chocolate chips, and it’s topped off with fresh fruit.
