Now that summer is officially here and H Tasting Lounge has opened the doors to its sleek new patio, cocktails are flowing by the seaside the Westin Bayshore Hotel.
The Thinner Walls’ name is a reference to snow and snap peas. Of the two, the snow pea has the thinner walls of the pod. The drink is a well-balanced, refreshing vegetal sipper.
¾ oz. lemon juice
¾ oz. snow pea juice
¾ oz. jasmine tea syrup
¾ oz. Suze or Amaro Montenegro with tonic bitters
1 ½ oz. Altos Blanco Tequila
To make snow-pea juice, use a juicer like Breville; if using a regular blender, add a touch of water and then use cheese cloth to fine strain.
To make jasmine-tea syrup, steep about 2 to 3 grams of Floral Jasmine Tea (TeaLeaves) in 6 ounces of 2:1 simple syrup in a saucepan. Bring to a light boil. Strain and cool in the fridge.
Pour all ingredients into a shaker tin, add ice, and hard shake for 5 seconds.
Strain into a glass with ice and one ounce of soda at the base. Garnish with snow peas.
