Drink of the Week: Time Winery's Timeless Ol' Fashioned

      Occupying a restored historic theatre in downtown Penticton, Time Winery offers food pairings to go along with various wine flights.

      If, however, you’re hankering for something a little different than a glass of Chardonnay or Merlot while touring wine country, Time’s Kitchen also serves several cocktails, each containing a minimum of two ounces.

      One of them is the Timeless Ol’ Fashioned, a classic with a modern kick developed by executive chef Alexander “AK” Campbell. Craft one of these when you want to give your wine-tasting taste buds a rest.

      Timeless Ol’ Fashioned

      2 oz Okanagan Spirits Craft Distillery's BRBN Bourbon-style corn whisky
      5 dashes of bitters
      1 brown-sugar cube
      ¼ slice orange
      1 tsp cherry syrup
      Orange wheel, marinated cherry, and rosemary sprig for garnish

      To make cherry syrup, combine 1 cup sugar, 3/4 cup water, ½ cup TIME Merlot, ¼ cup frozen dark cherries in a small pot over medium-high heat.

      Bring to a simmer until the sugar is completely dissolved, about five minutes.

      Strain syrup through a fine mesh sieve. Chill and use as needed.

      For the cocktail, place an ice sphere in a rocks glass.

      In a pint glass, muddle sugar cube, orange slice, cherry syrup, bitters, and bourbon.

      Fill with ice and stir for 30 to 45 seconds.

      Strain into prepared rocks glass.

      Garnish with orange wheel and marinated cherry.

      Torch rosemary sprig until smoking and place over top before serving.
