Drink of the Week: Fairmont Vancouver Airport's Spirit of '99

The assertive cocktail was created to mark the hotel's 20th birthday

      The Fairmont Vancouver Airport Hotel just turned 20.

      To celebrate, bartender John Robertson—who’s been crafting and pouring drinks there since it opened in 1999—created the Spirit of ’99 cocktail.

      Available throughout October and made with Wayne Gretzky No. 99 “Red Cask” Whisky, this is a bold libation to mark a milestone.

      Spirit of ‘99

      2 oz Wayne Gretzky No. 99 “Red Cask” Whisky
      ½ oz amaro
      2 dashes whisky-barrel-aged bitters

      Add all ingredients to a mixing tin. Stir, then pour into a coupe glass. Garnish with amarena cherry and lemon peel.
