"Trash Cooking": Royal Dinette unveils menu for second Ugly Duckling Dinner

      Chef and owner of Royal Dinette David Gunawan has released the menu for the second Ugly Duckling Dinner that will take place on November 24 at 6:30 p.m.

      The dinner aims to showcase a concept of “Trash Cooking” cuisine where Gunawan brings attention to food-waste awareness and sustainability issues by incorporating discarded kitchen scraps in his fare.

      Offcuts such as stems, stalks, leaves, and rinds will be transformed into delicious dishes in a 5 course dinner ($79) with drink pairings.

      Featured snacks include brandade with sunchoke skin and smoked salmon skin with tartare. Dinner items include broken shellfish with pea juice, kale stem risotto, and scallop skirt dashi with black cod, turnip, and scallop roe.

      “These dinners highlight the need to rethink and reconsider the unnecessary waste that commonly occurs at every link in the food chain,” said Gunawan in a press statement.
