Refreshingly simple El Ritmo will transport you to the tropics

      Local bar star Giancarlo Quiroz Jesus’s piña-colada-inspired concoction, which took first place in the Canadian leg of last week’s Bacardi Legacy Cocktail Competition, will remind you of sunny afternoons spent lounging beachside in the Caribbean.

      The tropical cocktail uses Bacardi Superior rum, artichoke liqueur, fresh pineapple juice, and coconut milk for a refreshingly pared-down taste that’s fit for all hours.

      Jesus will rep Canada with the drink at Bacardi’s global competition in April, but in the meantime, you can charm him into shaking one up at the Diamond (6 Powell Street) or make your own from the surprisingly simple recipe.

      Ingredients

      1 2/3 oz Bacardi Superior
      1/3 oz Cynar
      1oz fresh pineapple
      1/2 oz fresh lime juice
      1/2 oz Coco Lopez, coconut cream or milk
      Sugar to taste
      Grated nutmeg garnish

      Method

      Serve tall over ice, like a piña colada. Top with crushed ice and grated nutmeg.
