Hot Thai Kitchen cookbook author teaches class in West Van

Thailand-born Vancouver resident Pailin Chongchitnant shares secrets to Thai cooking

      Born and raised in Thailand, chef Pailin Chongchitnant now calls Vancouver home. It’s West Vancouver where the cookbook author and YouTube cooking-show host will be leading a cooking class on Thursday (May 12).

      A graduate of Le Cordon Bleu, Chongchitnant hosts the show Hot Thai Kitchen and also recently released a cookbook by the same name. Hot Thai Kitchen: Demystifying Thai Cuisine With Authentic Recipes to Make at Home includes recipes for everything from Gaeng Bpa (“Jungle Curry” to Yum Talay (Spicy Seafood Salad) to Mun Cheuam (Candied Cassava).

      Four courses from the book are the menu for the class, which runs from 6:30 to 9 p.m. at Ambrosia Adventure in Cooking School’s West Van location (503 15th Street).

      Start off with Tom Ka Gai--coconut galangal chicken soup—before learning how to make Pla Neua Beef “Ceviche” with lemongrass, served lettuce-wrap style.

      Then it’s time for Pad Makeua Yao, an eggplant stir fry with Thai basil served with rice, before finishing off with Gaeng Ped Bped Yang, a red-curry dish with barbecued duck and pineapple.
