Here's a rundown of some new restaurants opening up, including chef Trevor Bird's new venture.

      Once upon a diner

The team behind Fable in Kitsilano, which opened in 2012, has entered the next chapter of their story.

Chef Trevor Bird's Fable Diner opened up in the historic Lee Building at 151 West Broadway at Main Street.

The 86-seat farm-to-table diner takes over from the previous Reno neighbourhood greasy spoon.

Their soft opening menu runs the creative culinary range from nectarine salad (with hazelnuts, goat cheese, and a honey lemon vinaigrette) and loaded French toast (with nutella, candied walnuts, and fruit) to roast duck pancakes (with kimchi, green onion, and Japanese-style mayonnaise) and ancho salmon (with corn, chorizo, jalapeño yogurt, and corn nuts).

Of course, there are also sandwiches and burgers, including a tip of the hat to the previous inhabitants with the Reno Burger.

      Tapping into the waterfront

Tap & Barrel is opening two offshoots of the restaurant, TAPShack.

While Tap & Barrel owner Daniel Frankel runs three locations—Olympic Village, Coal Harbour, and North Vancouver—he converted two of his other waterfront venues into TAPShacks, which are smaller versions of Tap & Barrel.

The Pirate Pub at 1012 Beach Avenue reopened as TAPShack Burrard Bridge in June while the Mill Marine Bistro and Bar at 1199 West Cordova Street is relaunching as TAPShack Coal Harbour.

The menu includes sandwiches and burgers (like sous-vide steak sandwich or avocado toast and poached egg), salads (such as watermelon caprese or spicy tuna sashimi with greens), wood-board pizzas, and more.

Drinks include rotating beer taps (12 at Burrard Bridge, 20 at Coal Harbour), eight rotating wine taps, local spirits, and cocktails.

      And the eats go on…
