Vancouver's Fairmont Pacific Rim set to open new flora-inspired Botanist restaurant this April

      Following the closure of the Fairmont Pacific Rim’s Oru Cuisine earlier this year, the hotel has announced that a new restaurant concept will be taking its place this April.

      Inspired by flora of Canada’s West Coast, the eatery will be appropriately named Botanist. It will feature a cocktail bar and “lab”, an indoor garden, a dining room, and a champagne lounge that will serve up dishes and drinks that spotlight the natural beauty of British Columbia.

      Chef Hector Laguna, who has held positions at restaurants as far away as Miami, San Francisco, and Toronto, has been tapped to lead Botanist’s kitchen.

      Grant Sceney, who heads the Fairmont Pacific Rim’s Lobby Lounge and RawBar, will craft the cocktail list. David Wolowidnyk, currently of CinCin Ristorante + Bar, will serve as head bartender.

      Shon Jones-Parry and Jill Spoor will act as restaurant general manager and wine director, respectively. Both come from the Fairmont Pacific Rim family.

      The space will be designed collaboratively by Vancouver's Ste. Marie Art + Design and Glasfurd & Walker. The two design-and-branding firms are also responsible for engineering the look and feel of rooms such as Savio Volpe, the Glamoury, and Pidgin.
