New frozen-dessert spot creates liquid-nitrogen treats to intoxicating effect
By now you’ve heard of liquid nitrogen ice cream, with spots like Mister thriving in Vancouver's dessert scene.
Another cool shop has opened up in town, and it’s taking the frozen treat to new, heady heights.
77K Freeze (2240 Commercial Drive) is dedicated to “personalized” desserts, giving customers “dessert rights”.
Aside from the all-natural flavours and toppings, people get to pick the base (dairy-or plant-based milks such as fresh milk, cream, yogurt, fruit juice, coconut, soya, rice, almond milk, or any combination thereof), plus they can determine the sweetness themselves and substitute sugar with honey, maple syrup, Stevia or Truvia.
Co-owner Winnie Low says some of people’s own freeze creations have included peanut butter-cranberry (“surprisingly good”) and spinach-chocolate.
But what sets the shop apart is its adults-only menu.
As of 7 p.m. nightly, 77K Freeze serves up liqueur-infused treats called Dark Matters Freezes.
Some of the flavours are:
Strawberry Champagne
Honey Mango, with Jack Daniel’s Honey, rum, mango, water chestnut, spices, honey
Hazelnut Café, with Kahlua, rum, hazelnut syrup, and cream
Luxardo Cherry - Luxardo, Kirsch gold, cherry, and cream
These boozy numbers can be consumed in the venue’s back “Ice*Burg Lounge", complete with glowing cube furniture. That’s the same area where 77K Freeze hosts workshops and kids’ birthday parties.
77K Freeze’s nonalcoholic desserts include house specialties such as:
Snowflakes- Lychee-and-water-chestnut yogurt
Oh Canada- Maple syrup, vanilla, and bacon-bits ice cream
Go Green - Kale, spinach, and vanilla ice cream
Strawberry Kiss - Strawberry and raspberry ice cream
Blueberry pine - Blueberry, pineapple, and lemon zest
Bunny Surprise - Carrot and peach ice cream
Its top seller is the Vancouver Red Velvet: Dutch dark chocolate and cranberry ice cream.
77K Freeze takes its name from the low boiling point of liquid nitrogen, as measured in Kelvin temperature scale.
