Pride Crawl Fundraiser 2017: Arc puts a West Coast twist on the classic Clover Club martini

      The inaugural Pride Crawl Fundraiser is in full swing, as we count down the days to Vancouver Pride Week next week.

      The crawl, if you'd already heard, is raising funds for the Dr. Peter AIDS Foundation, which provides care for HIV people.

      Over 45 food and drink establishments are participating by creating special Pride-themed cocktails with partial proceeds going to the Dr. Peter AIDS Foundation. It continues until August 6 and a full list of bars and restaurants that are involved is available at the foundation's website.

      One of the participants is Arc restaurant at the Fairmont Waterfront hotel (900 Canada Place Way).

      Arc bartender Robert Khazarmi concocted the Waterfront Clover Club martini, a West Coast twist on the classic Clover Club cocktail that employs ingredients from the restaurant's rooftop garden.

      Should you wish to create this cocktail at your Pride parties, they've provided the recipe for your enjoyment. Khazarmi recommends using the locally sourced Tempo Renovo Dry Gin which is made from wheat grown in British Columbia.

      Waterfront Clover Club martini

      Yield: 1 Cocktail

      Clover Club Martini

      1 1/2 oz pear- and thyme-infused gin (see recipe below)
      3/4 oz honey
      3/4 oz fresh-squeezed lemon juice
      3/4 oz egg whites
      6 muddled raspberries

      Add martini ingredients into glass shaker. Shake vigorously for 12 seconds. Strain into chilled champagne martini glass. Garnish with fresh thyme sprigs or a raspberry.

      Pear- and thyme-infused gin

      1 bottle dry gin
      6 pears, peeled and diced
      large handful of fresh thyme
      1 mason jar

      Add pears, thyme, and gin to mason jar. Allow gin to infuse for 48 hours. Strain and set aside.
