This figgy take on the classic Tom Collins, by Cocktail Recipes With Fiona, incorporates an ingredient from Vancouver Island.   

It makes use of Empress 1908 Gin, which is a collaboration between Victoria Distillers and the Fairmont Empress Hotel in Victoria. 

It's Thyme to Dream

Ingredients
1½ oz Empress 1908 Gin
1 oz fig syrup
1 oz lemon juice
soda water (to top)
sliced fig and thyme sprigs 

Method
Build in a cocktail glass, layering Empress 1908 Gin last. 
Stir, and enjoy!
