Here’s a cocktail recipe from Hy’s Steakhouse and Cocktail Bar in Vancouver that uses a very Canadian ingredient.
This cocktail feature, which Hy’s recently featured as a special, is gin-based, with tart cherry juice and a touch of real maple syrup.
Red Maple Sour
Glassware: chilled coupe
1.5 oz Bombay Sapphire gin
0.75 oz maple syrup
1 oz lemon juice
1.5 oz cherry juice (such as Black River Pure Tart Cherry Juice)
1 egg white
Add all ingredients to shaker.
Dry shake to a count of 10.
Add ice and shake again to another 10 count.
Strain into chilled, ½ maple sugar rimmed coupe.
Sprinkle maple sugar over maple leaf stencil on top of cocktail foam.
