B.C. summer recipes: Well-Seasoned's watermelon margarita popsicles
Popsicles sold out during the recent heat wave in B.C.
But here’s a recipe, from Angie Quaale, owner of Langley’s Well Seasoned: A Gourmet Food Store, for adults who want to enjoy a frozen treat with a twist.
Quaale previously provided recipes for cucumber and lime mint pops and three-ingredient ice cream, as well as watermelon salad with feta and mint.
Watermelon Margarita Popsicles
Ingredients
1/3 cup sugar
1/3 cup fresh lime juice
4 ½ cups seedless watermelon, chopped
¼ cup tequila
1/8 tsp cayenne pepper
Instructions
Blend the sugar and lime juice in a blender until the sugar dissolves.
Add the watermelon, tequila, and cayenne. Puree until smooth.
Pour the mixture through a fine sieve, pressing with a spatula to remove as much liquid as possible.
Pour the mixture into popsicle molds and freeze until firm.
