Mother's Day: How to create a beautiful High Tea at home

Plus: Here's how to make classic Poppy-Seed Egg-Salad Sandwiches

      If you have a family tradition of taking mom out for high tea for Mother’s Day and are wondering what to do now that COVID-19 has dashed those plans, why not create a special tea service at home?

      Cece Krecsy, owner of Little White House & Co., a Parisian-inspired boutique and café in Fort Langley, shares a few tips to create your own tea salon this Sunday (May 10).

      Build your own tea tray

      Start with a dinner plate for the bottom, for savouries and finger sandwiches. In the centre of the plate, place a wide-mouth cocktail glass upside down.

      Atop that, place a luncheon or bread-and-butter plate, for scones, biscuits, jam and Devonshire cream.

      Then, place an upside-down tea cup in the centre. Top this with a tea saucer for sweets and fruit.

      Voila!

      Make your own table dressing

      No table runner? No problem.

      Cut a roll of gift wrap to fit your table for the runner. Then trace a circle using your luncheon plate to cut your own doilies. Lastly, trace a 3-by-3-inch square of gift wrap and fold in half for name tags.

      Make it a picnic

      Instead of a table, head to your living room floor, porch, or patio for a picnic. Layer a soft fluffy rug with a throw or two, add a few large pillows, and sprinkle flowers and petals all around. Add in your own tea try and goodies or pick up a High Tea package to go.

      Poppy-Seed Egg Salad Sandwiches

      Yields five regular-sized classic sandwiches

      Ingredients 

      10 boiled eggs (cooked, peeled, and grated)
      2 Tbsp mayonnaise
      2 Tbsp Miracle Whip
      1 ½ tsp grainy mustard,
      1 tsp black poppy seeds
      Pinch of salt & pepper

      Method

      Lightly mix all ingredients together in a bowl. Spread a heaping Tbsp of egg salad mixture on a mini croissant or crustless bread (if using bread, cut into small finger-size portions).
