New tropical "butcher bundle" raises funds to support vulnerable local youth

      Escape to Hawaii from home and help vulnerable youth develop critical life skills: that’s the gist of a new local culinary partnership.

      Fairmont Hotel Vancouver executive chef Colin Burslem is teaming up with Richmond’s Intercity Packers Meat and Seafood—a wholesaler that pivoted to selling its products directly to the public with the onset of COVID-19—to raise funds for Mackie’s Place. The Surrey-based youth social house supports young people who may be experiencing or surrounded by poverty, trauma, addictions, and other challenges through healthy, positive relationships. It also offers programs like chef skills, barista skills, and entrepreneurship training.

      Burslem and Intercity Packers have released the Escape to Hawaii Pack, a butcher bundle of the chef’s favourite seafood and meat products that people can cook at home.

      The box consists of Maui-style beef short ribs (two two-pound bags), 2.5 pounds of coconut butterfly shrimp, mahi mahi fillets (four six-ounce portions) and tuna poke kits (two 10-ounce boxes). It sells for $128.89.

      For every pack sold, Intercity Packers is donating $5 to Mackie’s Place.

      The fundraising effort is part of company’s Intercity Tip Jar, which was established earlier this year in response to the pandemic. To date, the tip jar has collected more than $15,800, supporting other organizations such as the Vancouver Aquarium, the Greater Vancouver Food Bank, and the Vancouver Food & Beverage Community Relief Fund.

      “Joining two of my passions together of people and food with this bundle allows me to give back,” says Burslem, a Vancouver native who oversees menu development and operations for Fairmont Hotel Vancouver’s Notch8 Restaurant, In-Room Dining and Banquet operations in the hotel.

      Founded in 1963, Intercity Packers has also launched an online store, with items like Prime certified Angus beef sirloin steak, wild sockeye salmon fillets, and wild halibut and Arctic char portions.  Contactless delivery is $15 throughout Greater Vancouver or free on orders over $300.

      Other butcher bundles include the Ocean Wise Champion, the Lean Machine, and a surf-and-turf inspired Best Date Night Ever.
