Snacking recipe: How to make spicy pineapple scallop ceviche

      Ceviche is a South American seafood dish that originated in Peru.

      Here's an easy-to-make recipe from Tostitos, and it's a way to spice up your snacking routine with a ceviche replete with seafood and tropical flavours.

      Spicy pineapple scallop ceviche

      Prep time: 10 minutes

      Ingredients

      1 lb fresh scallops, diced
      1/2 cup lime juice
      1/4 cup pineapple juice
      1/2 cup diced pineapple
      1/4 cup chopped fresh cilantro
      2 tsp freshly grated ginger
      1 small Fresno chili, seeded and minced
      1 bag (275 g) Tostitos Hint of Lime flavour tortilla chips

      Tip: frozen and thawed scallops can be substituted for fresh.

      Instructions

      In glass bowl, combine scallops with lime juice, pineapple juice, pineapple, cilantro, ginger, and chilli pepper.

      Cover and refrigerate for at least 2 hours or up to 24 hours.

      Strain ceviche and transfer to serving dish.

      Serve with Tostitos Hint of Lime flavour tortilla chips for dipping.
