      Township 7 Vineyards & Winery’s 2017 Seven Stars Polaris

      Tech sheet: Made of 100 percent South Okanagan unoaked Chardonnay grapes in the traditional “méthode Champenoise” style, this Blanc de Blancs Brut sparkling wine has aromas of Granny Smith apple, peach, lime and fresh bread as well as a crisp, clean finish.  

      First sip: In the nonsensical days of COVID-19, this Seven Stars vintage will add twinkle to your life. Refreshing, rich, and gorgeously dry, it tastes like stargazing when you’re falling in love and everything in the world is unfolding as it should. In other words, rather perfect.

      Next level: Serve with chilled seafood, a lump of Gorgonzola, simple risotto, or—how can it be wrong when it feels so right?—Paqui Mucho Nacho Cheese chips. In this upside-down era, comfort food and champers coexist quite nicely.
