Housed in a historic brick building in Yaletown, Blue Water Cafe offers an exciting dining experience for seafood lovers. Executive Chef Frank Pabst has led the kitchen team since 2003, and was named Chef of the Year in the Georgia Straight's 2008 Golden Plates Awards.

The menu is as innovative as it is mindful. Blue Water Café was a founding member of the Vancouver Aquarium's Ocean Wise program. Guests can choose from several menus including a Raw Bar menu featuring 12 different B.C. oysters, and an east-meets-west flavour through the extensive sushi, sashimi, and nigiri list. Meanwhile, the Seafood on Ice menu include Qualicum Bay scallop ceviche and Atlantic lobster ceviche. The main menu features top-shelf seafood, including arctic char, West Coast sablefish, and white sturgeon, as well as non-seafood choices such as Kobe-style beef short ribs and pearl barley risotto.

Wine director William Mulholland manages Blue Water Cafe's award-winning wine cellar, while bar manager Luke James McInnes oversees one Canada's most impressive scotch whiskey collections at over 170 labels. Blue Water Café is open every night for dinner.
