Strange Brew
Herbalists and naturopaths swear by homemade remedies, but rarely are they this fun. Brewing kombucha is quite the DIY project. A culture that’s a combination of acetic-acid bacteria and yeast is left to ferment in a jar of cooled, sweetened tea for about a week, during which time it balloons into something resembling a jellyfish. The resulting drink is hailed by raw foodies for aiding digestion and strengthening immunity. Patricia Ganswind, a Vancouver-based chef trained in raw vegan cuisine, hosts sessions on the process of making the tea. Upcoming classes are scheduled for July 26 and 27. A fee of $30 covers the class and a take-home kombucha culture. Alternatively, cultures can be bought from Ganswind for $4.
