Pride recipe: Love Crunch rainbow parfait, by Richmond-based Nature’s Path Organic Foods

      With Pride heading our way in Vancouver, here's one recipe to celebrate a rainbow of flavours with. 

      As there are numerous LGBT+ flags that reflect the diversity of queer communities, this example, from Love Crunch, can serve as inspiration for creating your own recipes to reflect the colours of your choice.

      Love Crunch, made by Nature's Path Organic Foods which is headquartered in Richmond, B.C., has donated over $21 million to food banks and LGBT+ organizations in North America and established a partnership in June with the Trevor Project, which is the world's largest LGBT+ crisis intervention and suicide prevention organization.

      Rainbow parfait

      Ingredients
      1 can full-fat coconut milk
      ¼ cup icing sugar
      1 dragon fruit
      1 papaya
      1 mango
      1 kiwi
      1 pomegranate
      ½ cup blueberries
      ½ cup blackberries
      1 bag Love Crunch Red Berries Granola

      Instructions
      Place coconut cream (not water) in a stand-up mixer fitted with whisk attachment. Lightly whip with icing sugar.
      Cut the dragon fruit, papaya, mango, and kiwi, placing different fruit into individual bowls.
      Take a parfait glass and add a layer of coconut cream, followed by a layer of Love Crunch Red Berries Granola.
      Follow up with a layer of dragon fruit, then blackberries, blueberries, kiwi, mango, papaya, and pomegranate.
      Chill until ready to serve.
