One Great Thing I Ate: Chips and dip at Elio Volpe

      “These are the best potato chips in the world!” the server says, putting down a dish of thick-cut taters on the table at a buzzing Elio Volpe.

      That’s a bold statement, but it just might be true.

      Elio, brand-new sister spot to Pepino’s, La Tana, and Savio Volpe, has instantly made a name for itself in Cambie Village. And while there are lots of delicious bites on offer here (pasta! Pizza! Fluffy pull-apart bread!), the baccala mantecato and chips are a surprising standout.

      Baccala mantecato is an Italian whipped ling cod dip. Smoky, creamy, and indulgent, it pairs perfectly with Elio’s house-made potato chips, which are covered in a zesty lemon pepper. Salty, crispy, crunchy, absolutely delicious.
