PiDGiN gets a new executive chef, Shin Suzuki

      There's a new executive chef at PiDGiN, the acclaimed Gastown restaurant that opened to anti-gentrification protests in 2013.

      Shin Suzuki has replaced Makoto Ono and while he'll keep many of Ono's well-received dishes such as the shishito peppers, chicken wings, and pork belly rice bowl, Suzuki is tweaking others and launching new menu items this month. These include a kale and wild-mushroom salad, and spring salmon with apple pistachio puree and ikura.

      According to a new release, Suzuki was born and raised in Toronto and trained in classical French techniques. He attended Ferrandi Paris, the French school of culinary arts, and worked at restaurants including Alain Ducasse au Plaza Athénée, and Taillevent, where he trained under Chef Alain Solivérès. 

      At PiDGiN, Suzuki will combine his French training with the Japanese flavours he grew up with.
