Fairmont Pacific Rim gets new executive chef, Nathan Brown

      The Fairmont Pacific Rim Hotel has a new executive chef with plenty of international culinary cred.

      Ontario-raised Nathan Brown comes to the West Coast from China, where he was executive chef for the Ritz-Carlton Beijing for three years. Brown is classically trained in French and Italian cuisine and has built his culinary repertoire from his experience abroad.

      He's spent the last decade working in hotels and restaurants from Asia to the Middle East to the Caribbean. He spent five years at the Fairmont Dubai and two at the Wynn Resort and Casino in Macau, China. He then spent three years in Singapore as executive sous chef at the Fairmont Singapore and Swissotel The Stamford.

      He has also worked at the Fairmont Southampton in Bermuda, among other places.

      Brown takes over at the Fairmont Pacific Rim from previous executive chef Darren Brown.

      Nathan Brown now oversees the entire culinary operation of the hotel, including giovane café + eatery, ORU, the RawBar, and the banquet kitchen.
