Vikram Vij brings his curries to Fairmont Banff Springs Hotel

      Tourists will soon be able to get a taste of Vikram Vij's cooking in the Rockies.

      The Vancouver celebrity chef's first job in Canada was at the Banff Springs Hotel in 1989. In a phone interview, a hotel representative told the Straight that Vij will be launching two new dishes this week at the hotel's Indian Summer restaurant.

      Every year, the hotel's Rundle Lounge converts from a tea room to an Indian restaurant called Indian Summer for the season.

      This year for the first time, Vij will be contributing two recipes to the menu: boneless goat curry with cassava root, and Vij's Family Chicken Curry served with basmati rice and naan.

      The restaurateur and entrepreneur left the Dragons' Den TV show this spring in order to work on opening his new Vij’s restaurant on Cambie Street.
