      Some of the hardy souls who braved the Arctic outflow at Whistler Blackcomb on February 9 took time to thaw out while hitting the second installment of the Hawksworth x Steeps pop-up lunch series. 

      Steeps Grill & Wine Bar is the name of the full-service restaurant in the Roundhouse at the top of Whistler. That's where the three-course meal took place as high winds literally blew snow up the mountain on a particularly blustery afternoon.

      Guests got four choices for starters, including a smoked ham-hock terrine with sauce gribiche, fresh dill, and grilled baguette; for mains, options included a dish of grilled chicken paillard, salsa verde, Granny Smith apple, celeriac rémoulade, and pecan. 

      The final lunch in the three-part collab happens at the same spot on March 16; cost is $65 per person plus tax and gratuity.

      The butternut-squash soup was made using a technique involving the Maillard Reaction, making it creamy without cream, and was topped with nutmeg crème fraîche and pumpkin-seed brittle.
