I like traditional foods

I am cooking basic traditional foods from all over the world. That's how I am surviving this pandemic. Watching YouTube, the new boob tube, gets me thinking about how bad foodie culture is though. It's so plastic. All you need is expensive cookware and an expensive kitchen with natural lighting through big fancy windows... and you can suck at cooking all you want. It will still get clicks. Foodies eat with their eyes and hardly at all with their mouths. Shame on them. I hope foodies smarten up... find their soul again.

Generally, once you have sufficient skill, recipes are easier read, and, anyway, you don't really need a recipe, just experiment with spices, etc. And don't be afraid of butter.
Like, watching Julia Child is fun. Don't be afraid of butter!

I guess it's how you use YouTube. There are thousands and thousands of lectures and documentaries but so many people today seen to lack the impulse control to stay away from the cat videos or celebrity gossip. Before I sign in to YouTube, I take a quick glance at what's trending and millions of people have watched the most ridiculous videos I've ever seen in my life. What an incredible waste of a powerful tool.

I work a lot, I watch loads of documentaries and educational videos on Youtube and, at the end of the day, cat videos! It's not a waste if it's relaxing, amusing and stress busting! It's not an impulse to control, it's a choice to have FUN for a few minutes.

Exactly right on the media bit - if it's free, they're selling your time and attention, usually to those you won't like much. As Vonnegut pointed out, the audience's attention is an indulgence not to be taken lightly.
Salt, pepper, onions, garlic, paprika and friends, butter, oils, cream...heat. Cooking is art and these are your major instruments. Raw materials - meats, veg, dairy and like-so - are the canvas. All else is variation on this theme.
Baking (also desserts and pastries), on the other hand, is impressionism. Be warned.
